Why Local?
Beyond reducing transportation costs and greenhouse gas emissions, eating locally helps to connect consumers with the food that ends up on their plate. As the physical distance between a farm and their plate decreases so to, does the mental one, such that consumers can better learn about the story of their food. The McGill Food Systems Project believe that with a greater understanding of the practices and people involved with the production of their food, consumers are empowered with the knowledge necessary to make informed choices that will lead to a more sustainable food system.
